In the heart of South Africa’s North Coast, the name Jacob Mthembu—better known to locals as Chef Jakes or Chef La Phumza, has become synonymous with resilience, community, and bold “freestyle” cooking. From his humble beginnings as a waiter to becoming a cornerstone of the Ballito culinary scene.
From Waiter to Visionary
Chef Jakes’ professional journey did not begin behind a stove, but rather on the floor of a restaurant. He joined and worked for Mozambik Restaurant with Brett Michielin, as they opened their first store back in 20025. Starting his career as a waiter, he possessed an innate hunger for more than just serving food; he wanted to create it. This transition from service to the kitchen was fuelled by a passion for local South African flavours and a relentless work ethic. During his time at Mozambik, he started studying at DUT between his work commitments.
He then established Kasi Taste on the DUT campus and went on to establish Kasi Taste in the Sangweni Tourism Centre in Ballito. The restaurant became a hub for authentic Zulu traditional food, offering the community a taste of “Kasi” (township) culture in a welcoming, professional setting.
Overcoming the Pandemic
Like many in the hospitality industry, Jakes faced a defining crisis during the COVID-19 pandemic. The lockdown forced Kasi Taste to close its doors, a blow that could have ended many culinary careers. However, Jakes’ story was featured in the Build for Better initiative—a platform dedicated to sharing stories of hope and restoration in South Africa.
Refusing to give up, Jakes reimagined his business. When he reopened, he didn’t just bring back the food; he innovated. He partnered with local entrepreneurs, such as the sisters from Ubuhle Bendalo Boutique Spa, to create a unique multi-sensory experience where traditional African dining met relaxation and massage. This collaborative spirit helped revitalize his brand and brought a “uniquely Ballito” experience back to life.
The “Freestyle” Era at The Eatery – the heart of the Workstation
Today, Chef Jakes has brought his signature energy to The Eatery, the in-house restaurant at The Workstation in Ballito. Here, he has evolved into what he calls a “freestyle chef.”
Having joined in 2011, he is moving beyond traditional Zulu cuisine, his current repertoire is a vibrant fusion of:
